Ingredients
1/4 cup plus 3 tablespoons plus 1 teaspoon olive oil
1 large eggplant, halved lengthwise and cut crosswise into 1/3-inch-thick half circles
1 tablespoon salt, possibly more or less depending on saltiness of sausage
2 teaspoons Emeril's Italian Essence or Italian herb blend
1 1/4 teaspoons freshly ground black pepper
1 pound Italian sausage, removed from casings
1 cup chopped yellow onions
2 tablespoons tomato paste
1 tablespoon minced garlic
One 28-ounce can whole Italian tomatoes, crushed with their juice
1/2 cup pitted black olives, coarsely chopped
1/4 teaspoon crushed red pepper
1/4 cup minced fresh basil leaves
4 tablespoons unsalted butter
4 tablespoons all-purpose flour
2 cups whole milk
1/8 teaspoon freshly grated nutmeg
1 pound ziti pasta
1 cup grated mozzarella cheese
1/2 cup freshly grated Parmesan cheese
Preheat the oven to 375?F. Grease a 9 x 13-inch casserole with 1 teaspoon olive oil and set aside.
Heat 1/4 cup plus 2 tablespoons olive oil in a medium Dutch oven over medium-high heat. Add the eggplant in batches, seasoning on both sides with 1/2 teaspoon salt, 1 teaspoon Italian Essence, and 1/2 teaspoon pepper. Cook until golden brown, adding more olive oil if needed. Transfer the eggplant slices to a plate as they cook and set aside.
Heat the same Dutch oven over medium-high heat. Add the sausage and cook, stirring to break up with a wooden spoon until browned, about 5 minutes. Add the onions, tomato paste, and garlic and season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Cook, stirring frequently, until the paste begins to brown, about 5 minutes. Add the tomatoes with their juice, the remaining teaspoon Italian Essence, the black olives, and the crushed red pepper. Reduce the heat to medium-low and gently simmer, uncovered, until the flavors marry and the sauce slightly thickens, about 20 minutes. Remove from the heat. Add the basil and adjust the seasoning to taste.
Meanwhile, melt the butter in a medium saucepan over medium-high heat. Stir in the flour and cook, stirring constantly, until the mixture is thickened and forms a light roux, about 2 minutes. Whisk in the milk and cook, whisking frequently, until the sauce is thick and smooth, about 4 minutes. Remove from the heat and season with the nutmeg, 1 teaspoon salt, and the remaining 1/2 teaspoon pepper.
Combine 4 quarts water seasoned with the remaining 1 teaspoon salt and 1 tablespoon olive oil in a large heavy pot over high heat. Bring to a boil. Add the ziti and cook, stirring occasionally, until al dente, 8 to 10 minutes. Remove from the heat and drain in a colander.
Arrange half of the eggplant slices on the bottom of the casserole, overlapping as necessary. Top with half of the cooked pasta, then half of the sausage-tomato sauce. Place another layer of eggplant slices on top of the sauce, then layers of pasta and sausage-tomato sauce. Pour the white sauce evenly over the mixture, then top with the mozzarella and Parmesan cheeses.
Bake the casserole until puffed and golden brown, 30 to 35 minutes. Remove from the oven and serve hot.

1 1/2 pounds pork tenderloin, cut into 4 pieces (6 ounces each), trimmed of fat
Salt and freshly ground black pepper to taste
12 slices bacon, plus 8 ounces sliced bacon, chopped
Mushroom Duxelles
1 large ripe Haas avocado, halved, peeled, pitted, and cut lengthwise into 16 slices
2 tablespoons chopped shallots
2 teaspoons chopped garlic
2 tablespoons Armagnac or cognac
1 cup Veal Reduction
1/2 teaspoon sugar
1 teaspoon unsalted butter, at room temperature
Preheat the oven to 400 F. Line a baking sheet with parchment paper.
Place each pork tenderloin between 2 pieces of plastic wrap. With a meat mallet, lightly pound out the pork tenderloin till about 1/8 inch thick. Unwrap and season both sides with salt and pepper. Homemade Andouille Sausage & Andouille Stuffed Jalapenos | Emeril Lagasse
Andouille Sausage
Ingredients
1 boneless pork butt, about 5 pounds, cut into 1-inch pieces
1/2 cup Rustic Rub
1 1/2 teaspoons chili powder
1/4 cup paprika
1 1/2 teaspoons file powder
3 teaspoons freshly ground black pepper
1 teaspoon cumin
1 1/2 teaspoons crushed red pepper
2 teaspoons garlic powder
2 teaspoons salt
1/4 cup chopped garlic
Prepare the smoker. In a mixing bowl, toss the pork with the remaining ingredients together. Cover and refrigerate for 24 hours. Remove from the refrigerator and pass the meat through a meat grinder with a 1/2-inch die attachment. Remove half of the meat and pass through the grinder a second time. Stuff 1/2 the sausage into 1 1/2-inch casings. Tie the casings at 4-inch intervals for individual links. Form the remaining mixture into 4-ounce patties. Place the casings and patties in the smoker and smoke for 25 to 30 minutes. Remove from the smoker and cool.
Andouille Stuffed Jalapenos
Ingredients
1 teaspoon olive oil
2 ounces bulk andouille, finely chopped
2 tablespoons finely chopped onions
1 teaspoon minced garlic
1 tablespoon chopped parsley
1/2 cup cream cheese
Salt and pepper
16 large fresh jalapenos
Essence
3 cups flour
2 egg yolks
3/4 to 1 cup beer
Pinch of baking powder
Salt and pepper
Oil for frying
Preheat the fryer. In a saute pan, heat olive oil over medium heat and render the andouille for 2 minutes. Add the onions and saute for 1 minute. Remove from the heat and cool. In a mixing bowl, mix the garlic, parsley, and cream cheese together. Mix well. Stir in the cooled andouille mixture. Mix thoroughly and season with salt and pepper. Using a sharp knife, split the jalapenos, starting at the tip, in half, leaving the stem intact. Remove the seeds from the pepper. Stuff 1 heaping tablespoon of the filling in the center of each pepper. Press the pepper together, sealing the cheese mixture completely inside. Season 1 cup of flour with Essence. In a mixing bowl, whisk the yolks and 3/4 cup of the beer. Season the mixture with salt and pepper. Whisk in enough flour to form a batter. If the batter is too thick add the remaining beer to thin the batter. Dredge the stuffed peppers in the seasoned flour. Dip the jalapenos in the batter, letting the excess drip off and coating the peppers completely. Gently lay the jalapenos in the hot oil and fry until golden brown, about 3 to 4 minutes. Remove the jalapenos from the oil and drain on a paper-lined plate. Season the peppers with Essence.

Ultimate Cheesy Crab And Corn Nachos
Ingredients
4 tablespoons unsalted butter
4 tablespoons all-purpose flour
2 cups milk
1 small can chopped green chiles, drained
1 1/2 cups grated Pepper Jack
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1 (9-ounce) bag blue corn tortilla chips (8 to 10 cups)
1 pound lump crabmeat
1 cup cooked fresh corn kernels, from about 2 small ears of corn
2 cups grated Cheddar
1/4 cup green onions, finely sliced
3/4 cup sour cream, for garnishing
2 tablespoons chopped fresh cilantro leaves, for garnishing
In a medium saucepan, melt the butter over medium-high heat and whisk in the flour. Cook, stirring constantly, for 2 to 3 minutes. Do not allow the flour to color. While whisking constantly, add the milk in a steady stream. Add the green chiles and bring the sauce to a boil. Cook, stirring frequently, for about 5 minutes, or until the sauce is thickened and bubbly. Add the Pepper Jack, salt, and cayenne pepper and stir until the cheese is melted and the sauce is smooth. In a large, ovenproof shallow casserole or on a large baking sheet, spread half of the tortilla chips in an even layer. Top with half of the crabmeat, half of the corn, and half of the cheddar cheese. Top with the remaining tortilla chips, crabmeat, and corn. Pour the hot cheese sauce over the crab and corn, then evenly spread the remaining grated cheddar over the top. Bake until the cheese is melted and bubbly and the nachos are heated through, 8 to 10 minutes. Garnish with the sliced green onions, sour cream and cilantro. Serve with the Pico de Gallo alongside.
